Flourless Peanut Butter Banana Chocolate Muffins (High Protein, GF)

These muffins have the perfect texture! They taste like a treat but are healthy and protein packed with 8g of protein in each muffin!

Flourless Peanut Butter Banana Chocolate Muffins (High Protein, GF)

Ingredients

  • 1 C. Peanut butter
  • 2 ripe bananas mashed
  • 2 eggs
  • 1/2 C. honey
  • 1/2 C. unflavored collagen powder (I used this)
  • 1/2 C. Chocolate Protein powder (I used this)
  • 1 T. vanilla
  • 2 tsp baking powder
  • Chocolate chips to drop on top (4-5 per muffin)

Directions

  1. In a blender or with a mixer combine all wet ingredients including the bananas
  2. Add the dry ingredients and blend again just until all ingredients are combined. Do not over mix. scrape down sides of the bowl or mixer as needed.
  3. Fill muffins 3/4 full and top with chocolate chips.
  4. Bake at 350 degrees for 16-18 mins until a toothpick comes out mostly clean.
  5. Let rest on counter until cool. Store in an airtight container.
